Ingredients
For the Brownie Layer:
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
For the Cookie Layer:
1/2 cup (1 stick) unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
Instructions
Preheat & Prepare: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
Make the Brownie Batter: In a mixing bowl, whisk together melted butter, sugar, eggs, and vanilla. Stir in cocoa powder, flour, salt, and baking powder until combined. Spread evenly in the prepared pan.
Make the Cookie Dough: In a separate bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Mix in the egg and vanilla. Stir in flour, baking soda, salt, and chocolate chips until combined.
Assemble the Brookies: Drop spoonfuls of the cookie dough over the brownie layer, gently spreading it out.
Bake: Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Cool & Serve: Let cool completely before slicing into squares. Enjoy!
Notes
For extra gooey brookies, slightly underbake them.
Add nuts or caramel for extra flavor.
